Just wondering, is this literally 1000's? Do you honestly think we can get 1000's of visitors from using this method?

If you somehow manage to get your link to a YouTube video page which gets 100,000 - 500,000 views (and this link is visible for all these viewers), then it's possible.
Anyway, YouTube backlinks are overrated.

I could care less about the value of the link. the value of the incoming traffic would be more intresting

Just to mention: Youtube link is " No follow" so you don't get backlinks.
But you will get traffic. if you get 10,000 views on your Video.
you might get 15% targeted traffic from there.

Like I said, it is valuable if this particular video gets a lot of views. What else is it that you want to know about it?
Driving enough traffic to a YouTube video can get your link into top-5 of "sites linking to this video". If people care enough to take a look at these sites, then you will get some traffic. But like I said, this video has to be very popular for you to get any real traffic.
